What's New?
Marlene Widra,
a frequent student at our classes, joins us as an instructor with a Friday Healthy Lunch Series.
Marlene has been a staple at Yahara River Grocery Coop, volunteering and cooking up some of their healthy and nutritious
goodies for the last 2 years. In this series she will share some of her favorite and most requested healthful recipes
with you.
Nancy Lynch continues her own Friday
Lunch Series with three new classes. These classes have been a nice change of pace, a different way to
enjoy a Friday lunch with friends and learn something new at the same time!
Andy
Watson brings us two new classes in his Cooking with the Seasons series, and we start a new
series of Culinary Techniques classes, starting with splitting up a chicken for multiple uses.
And Jill McLeod starts a new series of classes, Discover Spices.
Her spice expertise will be shared in these classes, cooking up dishes using the featured spice. This session features
Cinnamon and Fennel.
Who are all these instructors?
If you have never attended a class, here's high and lowdown on our wonderful group
of inspiring instructors:
Laurie Conrad
teaches around the Madison area and owns The Blue Daisy, a catering and culinary business. Laurie's initial
training was in the science field, and she nicely takes this knowledge into the kitchen to educate us about the whys?
of cooking. Laurie's unique recipes and her fun approach and sense of humor make her classes a joy!
Lydia Critchley's specialty
is HANDS ON classes, with a firm belief that the best way to learn to cook is to get your hands dirty! Her business,
Creative Cooking by Lydia, takes her around Dane County teaching cooking that is family friendly,
nutritious and low stress using foods that are already in your pantry.
Susie
Feest is a pastry chef and instructor in the Baking and Pastry Arts department of MATC's Culinary Program.
Susie obviously loves her pastry work, because her classes are fun and delicious. She even finds time to serve as the
pastry chef for Bunky's Restaurant in Madison!
Bill
Horzuesky is the executive chef and co-owner of Bluephies Restaurant in Madison. Bill's menus
are always fun, taking liberties with traditional foods and jazzing them up. An example of this approach is found in
his first book, Bluephies New American Cooking. Check out his website at http://foodfightinc.com/bluephies.htm Nancy Lynch loves to entertain with her
family and friends around her and her good food. Nancy writes a monthly food column for Madison Magazine called Dining
In with Nancy Lynch. Nancy's specialties could be called food for friends, because that's what her classes are
all about.
Jill McLeod has taught cooking
classes for many years. One of her many specialties is herbs and spices. It was during a stint working at The
Spice House in Milwaukee that Jill's eyes were opened on the world of herbs and spices and how to best use them. Subsequently,
she learned a lot, and enjoys trying new recipes and sharing her expertise with her students.
Kum Ng was recently honored to receive the "Culinary
Order of Merit" from the World Master Chef Society, a worldwide organization of only about 250 master chefs. He
was awarded his World Master Chef distinction from his work on his concept of Framework Cooking, a theory simplifiying
cooking utilizing a 'frame' instead of relying on recipes. Congratulations, Chef Ng!
Betsy Piper has been with All Through the House cooking almost since our inception.
Betsy loves her day job, cooking for the 'kiddoes' at the French House on the UW campus. Her specialty is appetizer
to dessert menus from European and Mediterranean cuisine traditions, and teaching low stress cooking.
Carl Povlick owns and operates the Naeset Roe Inn, a Bed and Breakfast in downtown Stoughton.
In the hospitality business for 30+ years, Carl worked in some of the finest restaurants in Milwaukee before deciding to open
his first B&B. Now, at the Naeset Roe Inn, Carl finds himself not only as owner, but as host and chef
as well! His guests rave about his gourmet breakfasts, his accomodations, and Carl himself! We are thrilled
to welcome Carl back to All Through The House!
Neeta
Saluja is the author of Six Spices: A Simple Concept of Indian Cooking. A native of India,
Neeta has found ways to simplify the complex nature of Indian ingredients and still produce an authentic Indian
cuisine.
Huma Siddiqui a
native of Pakistan, has found ways to spread the flavors of her homeland to all of us in the Midwest and beyond. Huma
has authored a cookbook about life and food in Pakistan; developed her own line of spices; began her business; produced a
Pakistani cooking show on television in her spare time with cooking classes in the Madison area and beyond. Huma
is always a gracious teacher and informative source for both foods and all things Pakistani.
Clark Stone has had a long career running with sharp objects. Clark,
our Wusthof Trident representative, knows knives and wants to share his knowledge with his students, and we are always thrilled
to welcome Clark back to All Through the House.
Andy
Watson began his career on the restaurant side of the food business, as chef in many of the fine dining establishments
in Madison. But he found his calling at Sprouting Acres Farm in Cambridge, where he is the owner and farmer.
Now Andy knows cooking from farm to table, and can show us how to cook what is fresh NOW!
